Guest guest Posted February 25, 2008 Report Share Posted February 25, 2008 Bread won't rise without the gluten, but there are some " breads " from other cultures that rise and are sourdough. The main one I'm thinking of is the Ethiopian bread made from Teff that has been fermented then fried into large pancake things. Actually I guess you could make sourdough pancakes out of things like spelt or barley that don't have much gluten. There's also a beer batter bread where the carbonation from the beer provides some of the rising power, but usually baking soda is added.
