I buy raw milk from a couple sources and one source from PA Amish tends to sour in one week but will sometimes stay fresh fot two weeks. I have learned to freezed what I don't use in one week, (we get our supply every two weeks). My other source which is here is Florida usually will stay fresh three weeks or longer. From what I have understood on the difference is immediately after milking my souce in here in Florida immediately cools down the milk and it is refrigerated. As the Amish don't have some of those resources I don't think this process happens. I know it is refrigerated because they use generators but they also carry it to the truck to be sent here on horse and buggy so it does not remain cold for that period of time. Anyhow, what I am getting at is if the milk is cooled down quickly and kept that way it seems to stay fresher longer. Carolyn, I get raw milk every two weeks and it has never gone sour in two weeks. Sometimes I have a little extra and it has gone about 16 days from when I received it before souring. I'm not sure how long the dairy farmer keeps it before it is delivered, but that is probably at least another day or two.
