best to cook peanuts?

hi all,

i've tried making soaked and dehydrated peanuts for milk and to snack

on, but they taste bitter and " green " and i don't like them. i read

on the web some comments like " peanuts need to be cooked " and from a

raw nut butter company " you can't make raw peanut butter " . one said

this is because they have a protein inhibitor, but didn't give

details. i know the chinese are big on boiling them. it seems

obvious to me that roasted peanuts in fact taste better which would

seem to me a clue for nutrition. also i've been pondering...if

peanuts are a legume and not really a nut, wouldn't you have to cook

them? just wondering if any of you bright people out there have any

insight on this.
