Guest guest Posted August 16, 2008 Report Share Posted August 16, 2008 I've come to view life, of late, not as necessarily loading up on nutrition, but rather, a shifting of the toxin load, picking my poison. Maybe I need a vacation, but anyway, sodium benzoate is one of the toxins I try to avoid just to kind of keep the load a ltitle lower on any given day. It just makes life a little easier. On the other, I'm toying with making my own pectin, which won't necessarily make life easier, but it looks like fun to try...... Ran across a blog that does a good job illustrating the process: http://www.halfpintharvest.com/2007/the-first-half-pint/ I have played with Pomona pectin - doesn't contain sodium benzoate, but it's not as simple to use as what I'd desired....and some people end up tasting " chalky " substances when Pomona is used. Have you tried it? Guest guest Posted August 16, 2008 Report Share Posted August 16, 2008 No, this is the first time I've actually had jelly " Set " rather than be fruity pancake syrup! I keep trying to avoid buying pectin but adding crab apples, etc. hasn't worked for me. Maybe the problem is that I can't seem to follow a recipe without trying to " improve " it in some way! I'll look at that blog, tho. When the sugar turns to GM this fall/next year, I don't want to have to buy anything that is sweet anymore - I know the organic cane sugar will still be ok; corn syrup and regular sugar (50% of US sugar is from beets and ALL of them will be GM) are going to be out. So I guess I'd better learn to make this stuff now. I just realized yesterday that the yeast I got (I let the sourdough starter go for the summer - getting too sour in the heat or something) was raised on beet molasses; I guess that will be out in the future too.
