I've come to view life, of late, not as necessarily loading up on nutrition,

but rather, a shifting of the toxin load, picking my poison. ;) Maybe I

need a vacation, but anyway, sodium benzoate is one of the toxins I try to

avoid just to kind of keep the load a ltitle lower on any given day. It

just makes life a little easier. On the other, I'm toying with making my

own pectin, which won't necessarily make life easier, but it looks like fun

to try...... Ran across a blog that does a good job illustrating the

I have played with Pomona pectin - doesn't contain sodium benzoate, but it's

not as simple to use as what I'd desired....and some people end up tasting

" chalky " substances when Pomona is used. Have you tried it?

No, this is the first time I've actually had jelly " Set " rather than

be fruity pancake syrup! I keep trying to avoid buying pectin but

adding crab apples, etc. hasn't worked for me. Maybe the problem is

that I can't seem to follow a recipe without trying to " improve " it

in some way! I'll look at that blog, tho.

When the sugar turns to GM this fall/next year, I don't want to have

to buy anything that is sweet anymore - I know the organic cane sugar

will still be ok; corn syrup and regular sugar (50% of US sugar is

from beets and ALL of them will be GM) are going to be out. So I

guess I'd better learn to make this stuff now. :)

I just realized yesterday that the yeast I got (I let the sourdough

starter go for the summer - getting too sour in the heat or

something) was raised on beet molasses; I guess that will be out in

the future too. If GM can cross into other species via viruses, who

knows what damage the yeast can do?
