culturing broccoli and cauliflower

in my latest batch of kraut i started with a base and white and red

cabbage but i used a lot of finely chopped broccoli and cauliflower.

the jars are now fermenting like normal. they are in clear glass mason

jars and i am noticing that they are looking a little...brown. is that

normal for broccoli? thank you.

My ferments always go through a more vivid color phase then wind up

looking brownish at the end. I'd guess it is normal.

By the way, bean sprouts are a wonderful addition to sauerkraut - make

it more sour and flavorful!
