Guest guest Posted July 16, 2008 Report Share Posted July 16, 2008 I usually use bacon grease for eggs and omelets (don't want to waste it from that good un-cured bacon! ;+) They will stick in cast iron unless I first get the skillet good and hot, then put the grease in it and let it heat up before putting the eggs in. I *finally* got the hang of making a perfect omelet in cast iron. Ain't no way I'm gonna use Teflon, like " everybody " says you have to. And, I very rarely re-season the skillet; just scrub it out with hot water, dry it upside down. A tiny bit of rust, I'm not going to worry about, and it sort of re-seasons it every time I heat it up and then put grease in it. Joy > > Fwiw, tallow seems to do the best job on my skillets.
