When I make chicken stock I use necks and backs only from our local green farm. Guest guest Posted March 24, 2008 Report Share Posted March 24, 2008 I cook the legs, thighs, and breasts, and throw the rest in a bag and freeze them until I have 2 sets of chicken parts to cook. I keep a bag in the frig for the waste veggie parts to make veggie stock. One of our local grass fed farms lowers the price of parts just before they expire, like some grocery stores do. I buy them when I have time to make stock, and just keep the stock pot going. Another grass fed farmer sells a piece of meat he calls hanging tender for $2.00/lb. Tastes just like pot roast when I throw it in a crock pot with some potatoes, onions, and carrots. It would probably make good fajitas, too. I belong to a veggie co-op. We get about $65-70 worth of veggies and fruit every other week, for $50. This weekend, I had some organic pears that were on their last leg. My co-op has been giving us WAY too many pears lately. I juiced them, then mixed it with some pureed frozen strawberries and made fruit leather for snacks on an upcoming camping trip. Re: NT Cost Reducing Ideas I second that. Guest guest Posted March 25, 2008 Report Share Posted March 25, 2008 I wonder if you could store bones in the ground for later use safely for someone who doesn't have a deep freeze? Any thoughts/comments? You could you hang them in the sun and dry them out and use them as a decoration until you wanted them? Some farmers (or butchers) may be willing to give you the bones and organs for free, especially if you let them know you are low income. You want a farmer who is grass based but not necessarily WAPF, since if they are a WAPF farmer they are probably selling their organs whereas we have found many great farmers whose bones and organs just get tossed because they don't know they have any value. You can just ask that the next time they get an animal processed if they would request the bones and organs and you will swing by to get them...
