Well rice is one of the only grains that is easy to refine, but it

does seem that it has been consumed for a very very long time. The

people in parts of China and India who ate other grains (Wheat,

Buckwheat, etc...) were noted to be healthier from what I have read

though.

I do like the flavor of brown rice, I guess because I make sure I get

it fresh, but white rice does sit in my stomach better though I

hardly ever eat it, maybe a few times a year. I'm pondering whether I

should eat it more since I just got a clay rice cooker, as cooking

rice was one of the things I didn't like.

Its a confusing issue. I think white rice cooked in homemade stock

would still be a very nourishing food that would be very easy to

digest. A little bit of raw cheese would also have a lot of minerals

if you decide to eat white rice as well...or even some seaweed.
