" I've been experimenting with some pemmican I made last fall. I wrapped it in parchment and scotch tape and left it out at room temp. Your question made me curious enough to crack it open just now. I'll wrap it back up and open it again in a few years. (I had read somewhere that some 20 year old pemmican was found and it was in perfect condition. They didn't say how they knew it was 20 years old.) At any rate, there was nothing crawling on it and no mold. Tasted it and it was just like when I made it.
