Guest guest Posted March 19, 2008 Report Share Posted March 19, 2008 Hi Lana, One of the best ways I have found to get lots of whey is to make cream cheese from buttermilk. You get loads that way. I found the taste of the cream cheese was much less sour if I used the raw dairy's buttermilk than if I made my own soured milk (set out overnight) to make cream cheese from. I may have let it sit too long. Who knows? Anyway, the second time I just ordered buttermilk straight from the dairy and used it to make cream cheese and whey. I got the NT stated amount of both, and I have been going wild with all my extra whey. It's nice having it on hand whenever I need it. Hope this helps.
