I've been eating nothing but coconut oil in order to lose weight. Also: Liver has no fat it seems so should I eat a spoonful of coconut oil or lard or butter with it? I usually have a little lard or fatty bacon with my liver. Coconut oil may help absorb other fat-soluble vitamins, but it does not have substantial amounts of vitamins itself. Lard has 23.6% of its calories from fat: http://www.nutritiondata.com/facts/beef-products/3468/2 It may be helpful to have extra fat, but you definitely have at least a moderate amount of fat to begin with.
