Guest guest Posted March 15, 2008 Report Share Posted March 15, 2008 I've been playing around with sausage recipes lately and am surprised at how easy they are to make. Recently I expanded into bratwurst and kielbasa. The bratwurst wasn't anything like what you'd buy in the store but very tasty; the kilbasa is a total hit. One thing to make your life easier: you don't need to stuff them into casings. Think about it - you can make kielbasa in hamburger patty shapes, cook them on the grill with a smoke box and some hickory so they smoke as they cook and eat them on a normal bun (with fried onions and peppers for heaven). I've run out of a lot of the meat I got in the fall and stored in the chest freezer and have been getting the regular grocery store hamburger - the 73% lean packages - they have the exact right amount of fat for the sausages! I just leave out the " pink salt " - saltpeter, and use regular salt. It alters the flavor a bit, but it still tastes good. Recipes abound on the internet for sausages; have fun! (I'm starting to wonder how much plain meat our ancestors had versus seasoned/salted/cured meats. Maybe it's seasonal; but we're in the season for cured meat and I'm loving it!)
