Guest guest
Just wanted to recommend cast iron waffle makers. I got one not too long ago and I just love it. I used to make sourdough pancakes but they can be tricky and were a pain to cook every morning (though I did for over a year at one point, just because they were so good!)...but waffles can be frozen in big batches and they taste just as good as fresh when toasted lightly in a toaster oven. To save the hassle of grinding the grains by hand I just soak them at least 24 hours (36 is better) then put them through my omega juicer on the masticate setting (this is so much easier than my manual stone grinder!) and add some water and sourdough starter and ferment it for at least another 24 hours. I usually use 1/2 spelt or kamut and 1/2 rye. Its very convenient as I don't have a working oven right now...and good bread that I can really trust is just too expensive. -
