Where is the conclusive evidence that diets low in saturated fat and cholesterol protect against heart disease? There is no such evidence. And where is the evidence that high cholesterol levels in the blood (without oxidation) cause heart disease? There isn't conclusive evidence here either. Yet there are many, many studies which show that PUFA causes both inflammation and oxidative damage, both primary risk factors for heart disease (and many other diseases such as diabetes and cancer). Steinberg's recommendations will very likely *increase* the rates of heart disease. In addition, children need cholesterol and saturated fat for proper growth and development - especially of the brain. ARRRRRGGGGHHHHHH!
