Guest guest
I had read about soft drinks containing benzene from the preservative sodium benzoate reacting with the ascorbic acid in them, and a voluntary recall/reformulation that has been happening in the last few years; I just noticed this fruit pectin I got today contains sodium benzoate, and I feel it's risky because of the acid and vitamin C in the jelly I made from it. This wikipedia article: http://en.wikipedia.org/wiki/Benzene_in_soft_drinks says people inhale much more benzene in a typical day than the amount that will be created in the food, even under the worst conditions of heat and fluorescent lighting. But I still don't know about this. Does anyone here have any opinions about this? I don't want to be feeding my kids carcinogens (the jelly was a hit). I know, I know the sugar in jelly makes it not so good, but around here peanut butter and jelly is a nice convenience food we use sometimes, and the sour jelly is pretty good on my homemade whole grain bread.
