If anyone has tried it that might not be a bad idea.

But with my bad cooking skills I'm not willing to be

the pioneer. :)

Did you try www.localharvest.org? If someone sells pastured pork,

they'll probably have lard. Whenever we buy half a hog, we get the

lard thrown in for free, as much as we want. It seems like a lot of

the people who know enough to buy pastured, organic pork don't know

enough to use the lard and it just goes to waste.

Last time they gave me 10 lb of it in a giant bucket! It's still

taking up half a shelf in the 'fridge while I wonder what to do with

it all. Maybe it would keep at room temp but the cats and dogs are

very anxious to get into it! I'll be using it for confit this

winter, but summer is no time for slow-cooking stuff in the oven!
