I had read that cooking food was the technological triumph that allowed humans the edge that led to our success - we could cook indigestible foods or foods that were hard to digest and make them easier to digest - so our range of edibles increased enough that we could thrive in marginal environments by eating tubers, onions, etc. I know too much raw garlic or onion makes me nauseous!
