Of course you can also spike milk with heavy cream and ferment it into yoghurt and/or kefir (both of which I do) to mitigate the carb factor. I have noticed that raw grass-fed milk has effects on my digestion which raw grass-fed cheese doesn't, for whatever that's worth.
