The Swiss villagers Price visited consumed cheese rather than milk most of the year. I am concerned with the usual sugar is bad for you message: milk is high in milk sugar (lactose) and has also been shown in experiments to spike insulin (it has a high insulin index) but not blood sugar.(*) Of course, in the US raw cheese is also legal to sell in groceries, etc. I like the taste of raw milk (I just drank a glass) but wonder if switching to raw cheese would not be better?
