Hi ,

Thanks for getting back to me - I love your suggestion

about the cream cheese instead of the mayo - that

sounds absolutely delicious. And I know I could make

salsa to use instead of ketchup (if I really needed

to).

The other thing I have to try to add to our menu is

coconut (all parts). I've never liked it (even the

smell), but I'll try to gradually add it to stuff.

I've found a 2007 draft list of sources (looks like

farms and brand names) on a local WAPF site. And I

know we have 3 huge farmer's markets locally. Plus

there are some well-known farming areas not too far.

But I just realized one of my biggest problems will be

adjusting to making purchases for multiple days all at

once. Right now, I shop very 'European-style' - I go

to the grocery daily to get what I need (primarily for

dinner each night). I can't very well run to farmer's

markets or farms daily - I'm not used to shopping for

a week or even two weeks worth of food at a time.

I will usually make something for supper that I'm

" feeling " for that day, or something that will use up

an ingredient that needs to be finished (i.e. if I

have avocados that are ripe, I'll usually decide to

make tacos). I love the adventure of surprising myself

everyday with " whatever I feel for " .

That's why I'm finding it hard to not only figure out

how I'll be able to afford the " new " stuff, but also

how to deal with the need to buy enough on each trip

to make it practical. Even though we eat relatively

healthy right now, these 2 changes will require new

strategies.
