Sodium tripolyphosphate is said to be very water soluble

http://en.wikipedia.org/wiki/Sodium_tripolyphosphate . So if you are

poor, soaking scallops in a couple changes of h20 will help with

toxicity. Drain them dry in the fridge as long as practical, and blot to

surface dry.

Wouldn't this only be of concern for wet scallops?
