Guest guest
Hey I made some saurkraut and since the cabbage was small, there was a few inches of space at the top of the jar. After a few days I transfered it to the fridge. After a week or two there was this almost half inch layer of darker saurkraut that almost had a pinkish hue. If I scoop it out, is it safe to eat what's under it?

Guest guest
So was the top layer not fully submerged anymore? or did it just turn an off color? In either case I would scoop out the funny colored layer and taste whats below. It will taste funny just because its sauerkraut but if it tastes offensive to you I would consider tossing it. It sounds like it just oxidized a bit, I don't think it went bad. I don't like sauerkraut until it sits in the fridge for like a month, after which I like it a lot. At first it just smells and taste like garbage to me but then after aging I think its delicious. - > > > > Hey I made some saurkraut and since the cabbage was small, there was a > > few inches of space at the top of the jar. Guest guest
I'm sure it's fine. Smell it and if it smells good then pop those jars in the refrigerator for cold storage. -PattyT --- In , " Cray Fish " <crayfishfeed@...> wrote: > > I forgot about my saurkraut b/c I put it away in the cabinet to ferment > and it's been sitting there for 5 days instead of 3.
