Guest guest Posted May 6, 2008 Report Share Posted May 6, 2008 I have been eating Manchego cheeses for more than a year. I have UC but am in total remission since several months and take no meds. I do not believe all Manchego cheeses are SCD legal. Manchego is a very popular type of cheese from the La Mancha province in Spain (sheep and goat milk) but one must be certain to buy only totally cured. I have picked up one that is cured and it is delicious and safe. I buy a good piece of it every other week and alternate it with Ilha cheese (from the Azores Islands) which is 4 months cured made from cow milk. Very important is that the cheese is cured meaning no lactose traces are left unfermented. If you can, eat it with a good glass of dry red wine, just before dinner.
