So I end up with a lot of very boiled (a bit dry) chicken. So far I(a) break it up into a soup( eat it cold, as-is© heat it in coconut oil and smush it between two slices of almond breadWhat are some other ways I can use cooked chicken, especially really tasty dinner-type dishes?(We're not up to tomatoes yet, but will try them again soon.)Baden Be a better friend, newshound, and know-it-all with Yahoo! Hi Baden, Depending on how many foods you can eat, there are lots of things to dowith chicken. One easy one for cooked chicken (or veggies or anything else) is to just melt some cheese on top of it! Chicken is also great in omelettes - omelettes are my new sandwich! I used to eat sandwiches for lunch almost every day and now it seems I eat omelettes almost every day (luckily I work at home). My favorite is chicken, broccoli or spinach, and Havarti cheese. Yum!! For dinner-type meals - I actually just made this dish last night and it was really good. Thanks to Raman Prasad for the inspiration for the spice mixture from his " Nafisa's Traditional Dal " recipe (in " Recipes for the Specific Carbohydrate Diet " ). I had never cooked lentils before in my life, but I really liked this: Crock-Pot Chicken and Lentils 8 oz. dried lentils 4 cloves garlic 1/3 onion (or more if you like onion) 3 chicken leg & thigh pieces (or other chicken pieces, about 2 lbs.) 1/2 c. chicken broth or tomato juice 3-4 sliced or diced carrots 1-2 diced tomatoes 1/2 t. salt 1/2 t. ground cumin 1/2 t. ground coriander 1/2 t. legal chili powder 1/4 t. ground turmeric Soak 1/2 pkg of lentils overnight, changing the water at least once. Drain. Place soaked lentils, along with all other ingredients, into the Crock Pot. Cook on low for 8-10 hours. I stirred a little yogurt into mine, which was really decadent. I'm not sure how far along the diet you are - so lentils might be a little too advanced for you. But if you have a Crock-Pot, you could just throw in chicken and veggies for a one-pot dish. There are also tons of stir-fry type dishes (Raman's cookbook has several) - but I'm not sure how well they would work for chicken that's already cooked. I can't imagine doing this diet without cutting up raw chicken! I have one cutting board designated for use with meat - and make sure I either run everything through the dishwasher or use very hot water and cleanser wtih bleach to clean up. Never had any trouble with any bad bugs related to meat. YOu can also search online for chicken recipes and look for some that could be easily modified (I do this alot - there are really a huge variety of dishes that can be SCD compliant with just a small bit of adjustment). (And by the way, I DID NOT COOK prior to being on SCD. It gets easier and you become much more proficient in creating awesome dishes.) Good luck! I like your meals ideas --some we can do right away and some after more foods are added. My kid will LOVE omlettes!Yes, I barely cooked at all before I started my son on SCD, and now everything is gourmet! I have even started feeding friends with joy and confidence!! Never thought I'd see THAT day!I am sure I will work my way up to separating raw chicken. When I started my kid on SCD, I had to ask my dad to cook up a turkey. When he brought it over, I was horrified by the sight --ripped some meat off it and asked him to take the rest away (from a $68 free range organic turkey!!!). The next time, I cooked the chicken myself, but had to ask for specific instructions. Now I'm a pro at the soup and dealing with the meat. My next step: cutting up raw meat. I appreciate your tips in making the transition safely. (Last night I made Elaine G's pineapple cheese dessert, then threw the whole thing out over worry re: the raw egg whites.
