Can hard cider be used like Calvados? I'm always on the look out for SCD legal wines, fortified wines etc to use in cooking. Here's their website. I'm not familiar with Calvados beyond my just looking it up on Wikipedia. I've got 4 gallons of cider fermenting in my basement, but I'm not optimistic that it will be good enough to drink. I guess that gives me a continuation of 'project hard cider'. Thanks for the link to the original sin cider. It does sound interesting...
