Hi Eileen. Your statement about Lyosan and Yogourmet confuses me. The

Yogourmet freeze-dried yogurt starter is the same as Lyosan freeze-dried

yogurt starter. Lyosan is the name of the company that makes (or sells) the

machines, parts, and cultures.

Or did Lucy advise you to add Lyosan acidophilus/yogurt capsules to your

diet?

I finally have my own bottles of Lyosan acidophilus/yogurt capsules, which

had to be shipped from Lyosan in Quebec, Canada, to Lucy's Kitchen in the

state of Washington, then back across the border to me in Ontario, Canada. I

would still like to find a local source of these capsules, but I won't have

to for a few months.

The store that Lyosan listed as selling this product, The Big Carrot, in

South-East Toronto, sells only the freeze-dried yogurt starter (and the

machines), but not the Lyosan capsules.

By the way, I don't use the S. boulardi and likely never will, since I am

allergic to all things fungal, including yeasts.

For yogurt-making, I prefer using the freeze-dried starter, rather than

buying otherwise-illegal yogurt containing the right bacterial cultures,

just to use some as a starter. The one time I bought Astro Balkan style

yogurt, I ended up putting most of it in our food waste bin.

Today I discovered that the glass jars that Lucy's Kitchen sells are

slightly smaller than the inner container of the Yogourmet machine. I wanted

the glass jars because I am trying to reduce the use of plastic in my

kitchen (to avoid getting it into my food). Also, it is going to be much

easier for me to use these jars, since I was able to screw the lid onto the

jar by myself before moving the container to the machine, something I could

never accomplish with the plastic snap lid of the Yogourmet plastic

container. At any rate, with less volume in the jar for milk and culture, it

is even more beneficial for me to use starter rather than whatever volume of

yogurt I would have to add as starter.

I use the yogourmet yogurt starter but was told it's not much acid...

so I should take the pills too - I get it from Lucy and the starter

from a health food store that charges a smidge less than the actual

company

I bought an excaliber but it's too big - no where to put it until we

move - so 2 quarts at a time here - so annoying - glad you worked it

out - how much can you make at once, 8 quarts???
