Is that what you're thinking of? I don't see how the recipe you posted could be legal. It seems to me, there would be tons of lactose left in it. Sorry I'm not more helpful. Can someone post the link? I do eventually want to start trying to make my own. I tried googling it and this is the only recipe I could find. Is it correct?... Dry curd cheese 1 gallon milk, whole or skim 1/2 cup instant nonfat dry milk 1 cup buttermilk 1 tablespoon salt Pour the milk into a 6-quart, heavy pot and add the dry milk. Bring the milk to around 86 degrees then add the buttermilk and stir well. Keep the milk at 86 degrees for 12 hours. When done, cut the formed curd into 1/2-inch pieces. Raise the temperature in the curd pan to 100 to 104 degrees. Cook for 30 minutes, stirring occasionally to keep the curd from sticking. Line a colander with clean cheesecloth or muslin cloth. Scoop out the curd into the colander. Allow to drain for several minutes, then rinse curd in lukewarm water. Allow to drain for several more minutes. Place drained curd into a bowl. Sprinkle with salt and mix evenly. Put into a covered container and chill. Makes about 11/2 pounds. I looked into making DCCC but found it was not possible, but I don't remember why. Is the main requirement that the carb count is 0? I know that no milk is added after fermentation. I cannot use the phone hardly at all, so I have not called Natural Pastures. I really like their product but it's probably not legal. Thanks for the scdiet link, but I've already checked it. It would be helpful if I could find someone near me who is on the diet. I'm now in touch with someone across the ocean in Vancouver, but I still have not found anyone here on the Island. The way they sell it here in Whole Foods is that they get these balls of DCCC in a huge vat that are each wrapped in friendship paper and someone cuts 1 of these it in half and puts into plastic containers and charge by weight. Sometimes I am able to find the actual individual packets Friendship makes but the other supermarkets in my neighborhood doesn't always have it. Does anyone see a problem with me buying this?? I am supposed to check the legality of all my stuff. Thanks everyone for baring with me. I truly appreciate it, seriously. I use it for baking, eating in the morning and etc., I live in the Washington DC area and we have Whole Foods stores here too. Once I asked a manager of WF store to order DCCC without salt and I was told that this cheese will not be ordered because it is not on the list. It does not make sense to me. They sell salty version of cheese and refuse to order more healthy version of the product. If you have close by Wegmans I would recommend to buy from them.
