My son still cannot eat raw fruits/vegies, but would love a dill pickle... Hmmmm.... I know that when canning or jarring pickles, they end up cooked when you pasteurize the jars. It would likely be a bit mushy, but still tasty. What you might consider is dilling the cucumbers, and leaving it for a couple of weeks to get fully flavored. I note that the ones I have in the fridge now, which are around 4 months old, are much softer than they were a few months ago, so the vinegar not only preserves them, it gradually softens (sort of like pre-digesting) them. I may opt to try pickling again this summer - it hasn't really worked for me in the past, in the sense that I haven't really wanted to eat the product <g>, but it might be time to start again.
