And it has many advantages: 1) the meat itself, like pork, chicken and turkey, is NOT marbled with fat, so if you do not want the fat, you can just cut it off! This works well for both large cuts and chops. If you want lean ground lamb, check to see if you grocer's meat department has it, and if not pick a lean piece and have it ground; or just cut the lean meat off a larger cut and run it through the food processor. 2) almost everyone likes lamb, once they have had it appropriately cooked. We had friends in Michigan when I was a kid who carried on about how they hated lamb, and would never eat it, so my mother fixed them the equivalents of lamb "filet mignon," with appropriate accoutrements, and they never did catch on, and we did not tell them--until about three years later! 3) my mother was convinced that if I, as a small child, did NOT have one lamb chop at lunch each day, that I might well succumb. So, each day, at home, I had: a) one lamb chop; mint leavs and basil on top; c) the best homemade sauce ever; d) baked potato or sweet potato or carrots or some combination thereof; e) salad with dark, leafy greens, and my mother's special dressing; f) fresh raw, organic milk from my father's dairy; g) home made flan, rather like creme brulee or creme anglaise. This all happened because I was born with cystic fibrosis, and my pediatrician had emphasized to our mother that "nutrition may save the child's life." He just may have been correct. Mutton, or "senior citizen" lamb is from much older, more experienced sheep, and is a whole different cooking and eating experience, but one can remove most of the fat. It does taste much stronger, and I suspect that most of the myths and mutterings about lamb have come from those who have heard about Mutton (mouton is sheep in French) and not about lamb. We are not orthodox and do not keep kosher so I could bore you to pieces with the joys of pork eating ("the other white meat"), as well, along with applesauce and cranberry sauce recipes, raspberry, too! Guest guest Posted October 5, 2008 Report Share Posted October 5, 2008 I actually ate lamb for the first time just recently. It is good, probably even better if one knows how to cook it.
