Eggs in restaurants

Hello listmates -

I recently learned something new about restaurants and eggs that I

thought I would share with the list.

Apparently, many restaurants (especially those that do a high-volume

breakfast, chains, or diner-style places) use some sort of egg

mixture that they pour out of a carton (sounds kind of like Egg

Beaters) for their omelettes.

I only learned this when I was asking a bunch of questions about

their ingredients and she said something like, " I'll tell them to

use real eggs. "

So - word of advice - eggs can often be a safe bet for us in

restaurants, but be sure to ask them if they use real eggs. Now I

always ask and I get some pretty strange looks from the restaurants

that have always used real eggs, but I have to know!
