I'm so sorry about your situation.

One of my favorite, easy, micowave desserts is Tim's Pudding Toast. I add cinnamon but I add cinnamon to everything ;-)

TIM¢S PUDDING TOASTFROM Tim Buck1 egg1 cup of ground almonds1/2 tsp baking soda1/2 tsp ginger (optional - I find it cancels the almond flavour)1/4 tsp salt1/4 cup honey In a microwaveable pyrex pudding bowl, whisk the egg and then beat inthe honey until well mixed. Mix in the ground almonds, baking soda, gingerand salt. Then scrape the mixture on the sides down so that it all sitsin the bottom of the bowl.(MAKE SURE THERE IS ENOUGH ROOM FOR THE MIXTURE TO DOUBLE/TRIPLE IN SIZE.) Microwave for 2 minutes and 30 seconds. (This is an 800W Microwave soadjust if neccessary) (DON'T STOP THE MICROWAVE DURING THIS TIME OR IT WILL DEFLATE.) Remove pudding from microwave and turn it upside down onto amicrowaveable plate. It will fall out

easily.(IF YOU WANT A TREACLE SPONGE PUDDING THEN COVER THE TOP WITH RUNNY HONEYAT THIS POINT- ABOUT 1/4 CUP.) Microwave pudding for another 30 seconds. Remove from microwave and if you wanted a treacle sponge pudding it'sdone! Otherwise if you wanted bread or toast slice away! But be carefulit's very hot in the middle. After about 5 minutes it firms up a lot moreand should be cool. This stuff toast beautifully and is very dry and light inside. I loveit!

Help needed from all you great cooks out there!

As some of you might have caught, I was severely affected by the recent floods in the midwest. My biggest problem right now (besides being homeless!) is that while I can live off of microwave and grilled meats and such, my sweet tooth is going nuts. I'm eating peanut butter, bananas and honey, some raisins and of course yogurt (YES I TOOK MY MAKER OUT WITH ME!)I would die for a peanut butter brownie or some honey candy.Does anyone have any idea of something I could make in my microwave that might tide me over. I do have a fridge but freezer space is non existant.Thanks, UC 1/08SCD 12/07
