I just bought a block of Trader Joes Mild Cheddar Cheese, the ingredients are: Pasteurized milk, cheese cultures, salt, microbial rennet, and annatto (for color). The package says it was aged 60 days, is this legal? I just want to make sure, because this is my first time introducing cheese! And for the future, how do I know which other cheeses are legal? (Link below) http://www.breakingtheviciouscycle.info/legal/legal_illegal_d-n.htmIt mentions a lot of cheeses by name; for example, cheddar (says to use freely), swiss (says to use freely), gouda (says to use occasionally), feta (says to only use a little and only after 6 months of improvement). I don't know what " microbial rennet " is -- my cheddar cheese lists only milk, cheese cultures, salt, and that annatto for coloring. Someone on this list told me that annatto is legal, and we've certainly been eating a lot of it with no adverse effects.
