Hugs Akiba -- to Dana:chicken Dana,I think the trick behind good and thoroughly cooked chicken is topar boil it first, or microwave it partially. That way, you are cooking itfrom the inside out, so that when you then fry it, you are crisping upthe outside last. Does that make sense? I use canola oil or basicvegetable oil. I dip in egg first, then whatever the breading or crumbmixture afterwards. Allow it to set on each side an adequate amountof time before flipping to the next side. Good luck and try again.
