Guest guest Posted January 14, 2008 Report Share Posted January 14, 2008 Dana, I think the trick behind good and thoroughly cooked chicken is to par boil it first, or microwave it partially. That way, you are cooking it from the inside out, so that when you then fry it, you are crisping up the outside last. Does that make sense? I use canola oil or basic vegetable oil. I dip in egg first, then whatever the breading or crumb mixture afterwards. Allow it to set on each side an adequate amount of time before flipping to the next side. Good luck and try again.
