Misty,

You are right! In the cook book I got with the coconut flour, the

amount used i very small compared to what we use in almond or other

nut flours. For example, there's a Lemon Cookie recipe that only calls

for 3/4 cup of coconut flour. Another recipe for Cheese Crackers uses

1/2 of almond flour and a 1/2 cup of coconut flour. So far I've only

used it in meat loaf and on chicken.

Is store bought coconut flour legal?

I seem to remember that store bought is illegal.

Please clarify which is ok.

I seem to recall people taking shredded coconut and grinding it down

to a powder in food processor.
