What are the other restrictions besides gluten? You obviously have found substitutes in your diet for the grains you cannot have, which might actually make the LID a little easier for you. Before my most recent scan, I didn't follow my own advice ( " prepare ahead! " ), and found myself ready to be on a low iodine diet without having done any cooking or baking (or even grocery shopping) in advance. Inadvertently, I wound up being on a wheat free diet in addition to the other foods which I couldn't eat for two weeks, and to my surprise, it wasn't very difficult nor did I feel more deprived for having to forgo bread and bread products. If you don't mind educating us a bit as to the special dietary requirements of celiac disease, I bet we can come up with some meal plans for you. And we're certainly willing to listen to any amount whining if that will help :-) BTW - I assume you've discussed your condition with your endo? Apparently the intestinal absorption of levothyroxine is often impaired in celiacs, and higher doses may be required.
