Also, I'm starting to sound like a sales person for Fran McCullough but honest I don't know her and just had to look up her name again as I type this--I guess I'm just so excited about finding a recipe book that has good recipes and they support what I'm trying to do--okay Chocolate Mousse from the Low Carb Cookbook by Fran McCullough 1 1/2 cups heavy cream 6 packets Equal Minced zest of 1 orange or 1 teaspon of Kahlua (I opted for the Kahlua myself) 1/2 tsp vanilla extract 1/4 cup unsweetened cocoa powder (she recommends Saco brand for low carbs) Per serving: Protein 1.8 grams, fat 33grams, carbs 3.7 grams Beat the cream in an electric mixer or by hand until it begins to get thick, then add the Equal a packet at a time. Add the orange zest (or Kahlua), vanilla, and cocoa powder and beat until almost stiff. Turn off the mixer and scrape down the sides and bottom of the bowl. Mix again. Divide the mousse among the 4 ramekins or small dessert dishes, cover and refrigerate for 1/2 hour or up to 4 hrs. I ate one a day for 4 days and it was still good on the 4th day.
