We're having company today and going out to dinner tonight. Fortunately we're going to a buffet place so I can get meat and cheese & salad. I'm going to eat my ham & cheese quesadilla for breakfast and shrimp salad for lunch--that worked out good for me yesterday. Guest guest Posted September 7, 1999 Report Share Posted September 7, 1999 Hi Penny Sure, it's so easy--I just take one of those la tortilla (whole wheat fat free) quesadillas ( I think Jep mentioned that on his web site) with 12g carbs and 9 g of fiber and I cut up a 1 ounce slice of Alpine lite swiss cheese (less than 1 gram of carbs and 7 gms of protein) and cut up 2 slices of extra lean ham (0 carbs and 10 g of protein) into chunks. Then i put the cheese & ham on the tortilla, fold it over and heat it in a pan on the stove until it gets melty inside and browned slightly on both sides. Its a great way to get lots of fiber--for my diet (protein power) it's only 3 gms of usable carbs and I'm already 1/3 of the way towards getting 30 gms of fiber (which I don't do very often). I too always fall short on fiber...the Y diet I am doing now states we should get 25 to 30 grams of fiber and I usually only get half of that if I'm lucky! I'm going to give the tortillas a try. Guest guest Posted September 7, 1999 Report Share Posted September 7, 1999 Molly I pay $1.99 for 10 of them so that comes out to .20 a piece--plus our state sales tax of course which is 7.6% here--on the other side of the mountains (Washington state) it's 8.6%--sometimes it's good to live in a very depressed area. My sister in West Washington orders them like you do and they freeze them and feel like they wouldn't have made it on Protein Power without them.
