Fast, easy and perfect for a summer dinner ....

PASTA SALAD WITH TOMATO, CORN & BASIL

(4 servings)

1 pound pasta

1 bag of frozen corn

2 ripe tomatoes, chopped

1 small bunch basil, chopped fine

mustard vinaigrette

In your a large pot of boiling water, cook pasta until al dente and then

add frozen corn.

Strain all in colander and let sit in sink.

In another bowl, combine chopped tomatoes, basil and vinaigrette.

Pour the mixture over the pasta and toss lightly.

May be served hot or cold.
