I made this yesterday and it is delcious! Turkey sausage (adapted from Charcuterie) 3 lb dark meat from turkey (raw). 1 lb nitrate-free bacon 3 tsp salt 1 tsp pepper 1 cup dried tart cherries, soaked for 1 hour and chilled 1 tbsp sugar 3 tsp fresh sage, minced 1/2 tsp cinnamon 1/2 tsp cloves 1/2 tsp ginger Cut turkey and bacon into chunks that will fit in the grinder. Toss all ingredients. Make sure they are very cold (put in the freezer for 30 min if you're not sure). Grind in sausage grinder. Mix the ground mixture for 1 minute, then form it into a log and freeze it, then slice it into 3/4 " slices for frying as needed. Quote Link to comment Share on other sites More sharing options...
