It’s hard to imagine anything more pure, healthy and appealing to America’s agrarian roots. Raw milk is always local—its shelf life is too short to allow it to be shipped very far. Many dairies that produce raw milk for retail feed their cows a pastoral grass-based diet, rather than corn, so the color of the milk changes through the seasons. Cream from unpasteurized milk churns to butter easily. Whipping air into the cream creates luminous clouds of sweet butterfat...
