I actually had a steak at Proof on Main here in Louisville (work

lunch) that came with a marrow bone on the side. I scooped it right

out and ate it with the steak...as my table mates watched in horror

and refused to believe that marrow could be nutritious.

imo, that's probably the best source we had before starting to use dairy

products (probably still way better for us too!).

K2 in marrow

Just ran across an interesting post by Stephan on vitamin K2 in bone

marrow, looks like marrow is a decent source of K2:

It's funny, because just before I went to Stephan's blog, I was

looking at some photos of food in France where they served marrow bone

with the meat at a restaurant:

H Mart, an Asian food market chain, carries large packages of frozen

marrow (and tendon, hearts, gizzards, black pork belly fat and other

amazing organ stuff plus poultry heads and feet). H Mart is a very

large grocery store by any standards. It is always packed with

people of many different ethnicities because they carry product

which american consumers won't buy because it is too unfamiliar or

strange. I often buy oxtails and black pork belly there. The prices

are very reasonable. They also have fresh fish that you can pick out

of large tanks and have fileted there or prepared.

No, it's not organic but it is from American sources.

Any decent asian food store should have some of these things.
