Guest guest
I want to start adding coconut oil to my smoothies again, but right now I don't have a source for fresh healthy eggs. Anytime I've tried to add coconut oil without first emulsifying with egg yolk I get hardened chucks of oil and the texture makes me gag. Is there something else relatively healthy I can use to emulsify the coconut oil? -- *~ Siemens~* Mama to 3 wonderful blessings, Married to 1 wonderful man! Guest guest
the way i do it is to blend it with gelatin by melting the two with hot water, then blend with other ingredients. s.
Guest guest
Thank you for the tips! I don't have a vitamix, and I can't say the idea of a room temperature smoothy does much for me LOL. I'll definitely try the gelatin and I read in the Coconut Lover's Cookbook that coconut milk will work to emulsify coconut oil too!! I'll be trying that as well
Guest guest
Well you should just try drizzling with a blender with ingredients fresh from the fridge and see what happens. Should be okay. On Fri, Dec 19, 2008 at 1:50 PM, Siemens <mandamom2many@...> wrote: > Thank you for the tips! Guest guest
Avocado works great as does dairy cream. Mixing slowly and directly into the coconut milk or yogurt prior to adding anything else works too, not as good as egg, avo., or cream. Works best with yogurt or coconut milk when using room temp ingredients. After i have all the stuff blended i will add a few pieces of ice to bring temp back up some. If the ice or frozen fruit is too soon it can clump the oil up. So blend oil directly with whatever you have chosen add the cold stuff last and after thorough blending. I find if i get clumps it is minimal. > > Thank you for the tips! I don't have a vitamix, and I can't say the > idea of a room temperature smoothy does much for me LOL.
