I am especially interested in finding out what happens to the fats. It is my understandng that the unsaturated fats found in nuts begin to oxidize the moment the nut leaves the shell - in other words the nut begins to go rancid. So nuts I buy shelled would be oxidized to some point - what happens when I soak them and the sprouting process begins? Are these oxidized fats somehow transformed? I have been buying our nuts shelled - but shelling nuts for an entire family is quite time consuming. WHile my kids enjoy doing this for snacks, shelling enough for an entire recipe is sometimes prohibitive. \ I'd appreciate any sources. Thanks You.
