I think her " must have " is only doing things that will give her millions of followers, hence the most famous face. Whatever sells to the most which means articulating whatever people already believe. Therefore she can only go get mainstream advice-givers because if she left the mainstream, there goes the 'main stream' of followers and money. " I think there are--do you watch Top Chef? Every so often they do a product-sponsored challenge that includes " healthy, low fat, blah blah blah " but it's the exception. Guest guest Posted March 18, 2009 Report Share Posted March 18, 2009 There are magazines like Cook's Illustrated I stopped subscribing to, or reading at all, a few years back. They are so full of weird mixed messages. They're trying to " low fat-ify " some things, and then they still have baked goods recipes with the butter. Plus, I don't learn anything from CI anymore. There are far better places to learn about cooking (apparently not Oprah). I was e-mailed an alternative recipe for pancakes by a family member (I made Sue Gregg's soaked ones at her house, where you use the blender, and I use 1/2 c oats 1/2 c buckwheat whole with buttermilk). I think she was probably trying to say " hey look gluten-free pancakes you don't have to soak! " as if I mind the soaking bit (and I guess she doesn't understand what it does for the flavor!). We did talk about how silly it seemed that they wanted you to use low-fat milk AND butter in the same recipe, like they were trying to keep the fat down...sort of...but then recognized it wouldn't taste very good without butter. By the way, I LOVE those pancakes! And if I eat too many, I just end up not being able to eat for hours. All that fat and stuff really holds me, and not in a bad way. Sometimes I've eaten food and the problem is that I don't digest it for all those hours - was more of a problem when I ate grains in that gluten family.
