Whether its healthier or not, my family much prefers white rice, so its what we end up eating most of the time (basmati), even though I like brown- do you think its worth soaking white rice? Isn't soaking largely to neutralise the phytates in the bran, which isnt there in white rice? Are there any other benefits to soaking? However that doesn't the mean the nutrients in white rice can't be enhanced in a fermented fashion of some sort. My husband was a die-hard white ricer, until I let him try the soaked brown rice. The texture is completely different. Even my neighbor who just came for dinner--she said she hates brown rice.
