I trapped four raccoons this winter and the recipe as follows was a hit at a family gathering recently. Everyone thought it was roast beef and I got great reviews. A true Murr-haha moment, indeed! They cleaned it up. One for the files? I saved the baculum for a toothpick. SWEET-SOUR RACCOON 1 raccoon cut into serving pieces 1 large onion, chopped 1 tsp each of salt, dry mustard and allspice 1/2 tsp black pepper 3/4 cup catsup 1 cup beef broth (I used chicken) 4 cups water 10 ginger snap cookies 3/4 cup vinegar 3/4 cup brown sugar I browned the meat pieces in a cast iron skillet in bacon grease and put them into the crockpot with the onion, mustard, allspice, salt, and pepper sprinkled over. In a separate pan heat the catsup, broth, water, gingersnaps, vinegar, and brown sugar. When well heated pour over the raccoon pieces and cook until tender. You might be surprised.
