Guest guest Posted May 18, 2009 Report Share Posted May 18, 2009 Or you can get one from using a bottle of raw kombucha from the store: Culturing Kombucha From Storebought Kombucha Tea without a scoby 1 Tea bag (black) 16 oz. pure water ¼ cup white sugar 16 oz. kombucha tea (starter tea) Boil the water in a stainless steel pot, add sugar, turn off heat and stir sugar until dissolved. Add teabags and let soak for 10 to 15 minutes. Remove tea bags and allow to cool to room temperature (overnight if necessary). Pour into clean glass fermenting jar. Add the starter tea to the jar. Cover securely with a clean, breathable cloth, paper towel, or the like, and leave for one week or more in a clean, warm, dark, protected place. Observe after a week for the formation of a translucent white scoby floating on top of the tea, formed to the shape of the fermenting jar. When the brew has reached the desired strength and the scoby is observable and fairly white (rather than transparent), pour the kombucha into glass jars or bottles for storage. Stored kombucha will continue to ferment at a slower pace, even producing small scobies in the storage containers. Kombucha may be stored with or without refrigeration I did this, and it works.
