How important is a very varied diet?

Primitive peoples have always eaten with the seasons. They ate what was

available at whatever time of year. Therefore, their diets were never extremely

varied. Some primitive peoples have very simple diets but still excellent

health. So is having a very varied diet essential for optimal health? Aren’t

nutrients stored in the body to be made available when those nutrients are

scarce during the off season, drought, etc?
