Sally Fallon said to let the tea steep until you can reach your hand in there to

pull out the teabags. That's 3 hours for me!

I bring my water to a boil, remove it from heat, add the sugar and tea bags, let

it cool for at least 3 hours, then put it in the container in which it will

ferment for 8-14 days, depending on the temperature in my house.

have any insite into what I may be doing wrong?

Thank you everyone for your replies.  One thing I'm wondering now is if I'm not

letting it steep long enough.  The instructions I have are to let the tea steep

15 minutes, but it sounds like people are letting it steep for hours.  After the

water is boiled I do put in sugar and tea and let it sit, covered of course,

several hours before adding the mushroom.  I have been keeping it covered during

the process with a clean dish towel.  Would that let in something to spoil the

culture?  I have been waiting 10 days before checking it because I'm afraid of

contaminating the culture.  When I check, there is no baby and if I wait longer

it just eventually develops a green mold on the water.
