I bring my water to a boil, remove it from heat, add the sugar and tea bags, let it cool for at least 3 hours, then put it in the container in which it will ferment for 8-14 days, depending on the temperature in my house. The instructions I have are to let the tea steep 15 minutes, but it sounds like people are letting it steep for hours. After the water is boiled I do put in sugar and tea and let it sit, covered of course, several hours before adding the mushroom. I have been keeping it covered during the process with a clean dish towel. Would that let in something to spoil the culture? I have been waiting 10 days before checking it because I'm afraid of contaminating the culture. When I check, there is no baby and if I wait longer it just eventually develops a green mold on the water. Gayle ============ = Wonder if it might be the tap water.
